Brazilian Beef and Black Bean Stew

Cajun-Style Beef Sausage
 1 lb ground beef (90% lean)
 1 tbsp liquid smoke
 ½ tsp garlic powder
 ½ tsp onion powder
 ½ tsp kosher salt
 ½ tsp smoked paprika
 ½ tsp ground red pepper
 ¼ tsp ground black pepper
 ¼ tsp dried thyme leaves
Brazilian Beef and Black Bean Stew Ingredients
 1 recipe Cajun-Style Beef Sausage
 30 oz reduced sodium black beans, rinsed & drained
 14 oz reduced sodium beef broth
 ½ cup onion, diced
 2 cloves garlic
 1 tbsp all-purpose flour
 2 cups fresh collard greens, thinly sliced
 2 cups hot cooked rice
 4 orange wedges (optional)

Combine all Cajun-Style Beef Sausage ingredients in large bowl, mixing lightly but thoroughly. Heat large nonstick skillet over medium heat until hot. Add sausage mixture; cook 8 to 10 minutes, breaking into 1/2-inch crumbles and stirring occasionally.

Add beans, broth, onion, garlic and flour to skillet; cook 12 to 15 minutes, stirring occasionally and mashing beans with potato masher. Remove skillet from heat; stir in collard greens.

Serve over rice. Garnish with orange wedges, if desired.
