Cajun-Style Beef Sausage
1lb ground beef (90% lean)
1tbspliquid smoke
½tspgarlic powder
½tsponion powder
½tspkosher salt
½tspsmoked paprika
½tspground red pepper
¼tspground black pepper
¼tspdried thyme leaves

30ozreduced sodium black beans, rinsed & drained
14ozreduced sodium beef broth
½cup onion, diced
2cloves garlic
1tbspall-purpose flour
2cupsfresh collard greens, thinly sliced
2cupshot cooked rice
4orange wedges (optional)

Combine all Cajun-Style Beef Sausage ingredients in large bowl, mixing lightly but thoroughly. Heat large nonstick skillet over medium heat until hot. Add sausage mixture; cook 8 to 10 minutes, breaking into 1/2-inch crumbles and stirring occasionally.

Add beans, broth, onion, garlic and flour to skillet; cook 12 to 15 minutes, stirring occasionally and mashing beans with potato masher. Remove skillet from heat; stir in collard greens.

Serve over rice. Garnish with orange wedges, if desired.
