Blue Burger with Tomato Bacon Jam

Tomato Bacon Jam
 ½ lb bacon, diced
 1 yellow onion, diced
 2 garlic cloves, minced
 ¼ cup strongly brewed coffee (or more water)
 ¼ cup water
 1 tomato, diced
  cup brown sugar
 ½ tbsp balsamic vinegar
 ½ tsp black pepper
Blue Burger
 1 lb Grass Rooted ground beef
 4 to 5 ounces blue cheese, crumbled
 1 tbsp chives, finely chopped
 1 tsp Worcestershire sauce
 ½ tsp salt
 ¼ tsp black pepper
 4 hamburger buns (brioche recommended)
 Optional toppings: tomato slices, aruglua and spinach (or your favorite lettuce)

Tomato Bacon Jam:

In a skillet over medium-high heat, cook the bacon, stirring often, until crispy, about 10 minutes. Using a slotted spoon, transfer the bacon to plate. Pour out all but 1 tablespoon of bacon grease.

Reduce heat to medium, and add the onion. Cook for 7-10 minutes, until softened and lightly browned. Add the garlic and cook for an additional minute.

Pour in the water and coffee, scraping the browned bits off the bottom of the skillet. Add in the cooked bacon, tomato, brown sugar, balsamic vinegar and black pepper. Reduce to medium-low heat, and simmer for 20-30 minutes, stirring occasionally, until thickened and jam-like.

Blue Burger:

Meanwhile, in a small bowl, mix the ground beef with 2 ounces of crumbled blue cheese, chives, Worcestershire, salt and pepper. Shape into 4 burger patties.

Toast the buns: Spread butter on the cut side of each top and bottom bun. Place butter side down in a skillet over medium-high heat or on the grill, and toast until the surface is golden brown, about 1-2 minutes. Set aside.

Grill: Heat grill to medium-high and grease the grate. Cook the burgers 3-4 minutes on each side, or until desired doneness.

Stovetop: Heat a skillet with a drizzle of olive oil over medium-high heat. Once the skillet is hot, add the burgers (working in batches if needed) and cook until desired doneness, about 3-4 minutes on each side.

Assemble: Spread the bottom toasted bun with Tomato Bacon Jam, then add your desired toppings and a burger patty. Finish with more blue cheese crumbles and the top toasted bun.
