Chili Jack Cheeseburger

Get ready for summer with this spicy cheeseburger made with pickled jalapeños, pepper jack cheese, tomato and lettuce.

 1 lb Grass Rooted 85% lean grass-fed ground beef
 Kosher salt, as needed
 Freshly ground black pepper, as needed
 2 tbsp vegetable oil
 4 slices deli-sliced pepper jack cheese
 4 leaves green leaf lettuce
 1 medium hot house tomato, thinly sliced
 ¼ cup pickled sliced jalapenos
 4 burger buns, split and toasted

Divide the ground beef into 4 equal portions and flatten into patties. Lay out on a parchment paper-lined baking sheet and season on both sides with the salt, pepper and garlic powder.

Heat a large cast iron skillet over medium-high heat then add 1 tablespoon of the olive oil and heat through. Add two of the patties to the pan and cook until the burgers are golden brown and slightly charred, about 3 minutes.

Flip the burgers then top each with a slice of cheese and cook for an additional 4 minutes for medium-rare. Remove to a plate and cover then repeat with the remaining oil and burger patties.

To assemble the burgers, place a piece of lettuce on each bottom bun, top with a cooked burger patty, a slice of tomato and sliced jalapeños.
