Sweet Onion Sauce
Serves Approximately 12 oz
Ingredients
1 Tbs olive oil
1 large sweet onion, sliced
1/4 cup sherry vinegar
8 oz Glace de Veau Roasted Veal Stock Reduction
1 Tbs butter
Salt and pepper, to taste
METHOD
- Sweat onions in olive oil in a saucepan over low heat until transparent.
- Add vinegar; reduce by 50%.
- Stir in Glace de Veau Roasted Veal Stock Reduction until blended. Remove from heat. Stir in butter and season to taste with salt and pepper.
