Preserve-Flavored Demi Glace
Serves Approximately 8 oz
Ingredients
1 tsp butter
1 tsp chopped shallots
2 Tbs white or red wine
3 tsp preserves of choice
6 oz Glace de Veau Roasted Veal Stock Reduction
Salt and pepper, to taste
METHOD
- Saute shallots in butter in a saucepan.
- Stir in wine and preserves; reduce by 25%.
- Stir in Glace de Veau Roasted Veal Stock Reduction. Season to taste with salt and pepper.
