Preserve-Flavored Demi Glace

Ingredients

1 tsp butter
1 tsp chopped shallots
2 Tbs white or red wine
3 tsp preserves of choice
6 oz Glace de Veau Roasted Veal Stock Reduction
Salt and pepper, to taste

METHOD
  1. Saute shallots in butter in a saucepan.
  2. Stir in wine and preserves; reduce by 25%.
  3. Stir in Glace de Veau Roasted Veal Stock Reduction. Season to taste with salt and pepper.
