Pork Demi Glace with Sweet Onion and Caraway
Serves Approximately 8 oz
Ingredients
1/2 tsp caraway seed
1/4 cup finely chopped red onion
1/4 cup white wine
4 oz Glace de Veau Roasted Veal Stock Reduction
1/4 cup heavy whipping cream
Salt and pepper, to taste
METHOD
- Place caraway seed in a heavy saucepan; toast for about 1 minute.
- Add onion and wine; reduce by 50%.
- Stir in Glace de Veau Roasted Veal Stock Reduction and heavy whipping cream; bring to a simmer. Season to taste with salt and pepper.
