Lamb Loin Nicoise Roulade

Ingredients
2 lamb loins split open and flattened
1/2 cup chopped pitted calamata olives
2 garlic cloves smashed
1/2 cup chopped roasted red peppers
1/4 cup goat cheese
1 Tbs olive oil
Salt and pepper, to taste
1/2 cup arugula leaves
METHOD
- Mix the olives, garlic, peppers, goat cheese and olive oil together. Lay the arugula leaves on the flattened lamb loins; place olive spread mixture evenly over the arugula. Roll up loins and tie. Rub lamb with olive oil and salt and pepper.
- In a sauté pan, brown the loins evenly. Place in a 325o oven for approximately 10 minutes. Remove and let rest 10 minutes. Remove string and slice into ½-inch slices (circles).
