Dark Beer Pork Demi Glace

Ingredients

1 Tbs olive oil
1 Tbs diced shallots
1/4 cup white wine
1/4 cup dark beer
8 oz Glace de Veau Roasted Veal Stock Reduction
1 Tbs heavy whipping cream
1 tsp dark beer
1 Tbsp stone ground mustard

METHOD
  1. Sweat shallots in olive oil in a saucepan. Add wine and ¼ cup beer; reduce by 70%.
  2. Stir in Glace de Veau Roasted Veal Stock Reduction; bring to a simmer. Stir in heavy whipping cream, 1 tsp beer and mustard.
