Chorizo Bean Dip
1lb Dos Mamacitas Chorizo Authentico
3, 15oz cans pinto beans or 6 cups cooked pinto beans with juice
1 cup chopped onion, small dice
1 bunch chopped fresh cilantro (optional)
2 cups shredded cheese, suggest; Chihuahua, jack or cheddar
Chopped fresh tomato and green onions for garnish (optional)
Pre-heat large skillet or pan over medium heat. Add chorizo and chopped onion, sauté while breaking apart until chorizo and onion are cooked through. Reduce heat to low. Pulse beans and juice in blender or food processor until desired smoothness. Add beans to chorizo and onions, season to taste with salt, (aprox ½ tsp). Mix in 1 ½ cups shredded cheese. Pour dip into baking dish and top with ½ cup shredded cheese. Keep warm in low temp 200 degrees oven. Garnish with chopped fresh tomatoes and green onions if desired. Serve with warm tortillas or tortilla chips. May also be served in small crock pot.
