Chilled Avocado Soup
8 oz Glace de Veau Roasted Veal Stock Reduction
2 Tbs chopped fresh shallots
1/2 tsp chopped garlic
8 large avocados (peeled and pitted)
¼ cup fresh lime juice
2 cups heavy whipping cream
3 cups water
1/2 tsp ground cumin
1/2 tsp hot sauce
Dash cayenne pepper
Salt, to taste
Add shredded chicken and sour cream.
- Place Glace de Veau Roasted Veal Stock Reduction shallots and garlic in a sauté pan. Bring to a gentle simmer for 3 to 4 minutes. Remove from heat; cool to room temperature. Transfer to a food processor.
- Add avocados, lime juice, whipping cream, water, cumin, hot sauce, cayenne and salt to taste to food processor with Glace mixture; blend until smooth.
- Garnish each serving with shredded chicken and a dollop of sour cream.
