Chilled Avocado Soup

Serves Approximately ½ gallon
Ingredients

8 oz Glace de Veau Roasted Veal Stock Reduction
2 Tbs chopped fresh shallots
1/2 tsp chopped garlic
8 large avocados (peeled and pitted)
¼ cup fresh lime juice
2 cups heavy whipping cream
3 cups water
1/2 tsp ground cumin
1/2 tsp hot sauce
Dash cayenne pepper
Salt, to taste

METHOD

Garnish

Add shredded chicken and sour cream.

 

Soup

  1. Place Glace de Veau Roasted Veal Stock Reduction shallots and garlic in a sauté pan. Bring to a gentle simmer for 3 to 4 minutes. Remove from heat; cool to room temperature. Transfer to a food processor.
  2. Add avocados, lime juice, whipping cream, water, cumin, hot sauce, cayenne and salt to taste to food processor with Glace mixture; blend until smooth.
  3. Garnish each serving with shredded chicken and a dollop of sour cream.
