Apple Pork Demi Glace
Serves Approximately 8 oz
Ingredients
1 tsp olive oil
1 tsp diced shallots
4 oz Glace de Veau Roasted Veal Stock Reduction
5 Tbs chunky applesauce
1/4 cup apple cider vinegar
1 Tbs brown sugar
1 tsp chopped fresh sage
Salt and black pepper, to taste
METHOD
- Sauté shallots in olive oil in a saucepan.
- Stir in Glace de Veau Roasted Veal Stock Reduction applesauce, vinegar, brown sugar and sage. Simmer; reduce by 25%. Season to taste with salt and pepper.
